Strawberry cheesecake cupcakes

Earlier this week I shared my strawberry and cream cakes. Another one of my favourite strawberry recipes that is perfect for Wimbledon are these strawberry cheesecake cupcakes:
180g caster sugar
3 eggs
180g soft margarine
180g self raising flour
100g cream cheese
2 tablespoons caster sugar
strawberries halved or quartered depending on size

Cream together the caster sugar, eggs and margarine for 2-3 minutes with an elctric whisk,
Fold in the flour. (You may wish to add a splash of milk to slacken the mix: this is especially important for gluten free flours as they absorb more liquid)

Mix together the caster sugar and cream cheese.
Place a teaspoon of cake mix in each case. Place a strawberry on top then a small teaspoon of cream cheese mix. Cover with a tablespoon on cake mix.


Bake for 15 minutes GM5 until golden brown on top.
