April A to Z gluten free vegetarian treats: L is for lemon syllabub

Super simple, very rich dessert with only 3 ingredients, yay! If you fancy playing with flavours then try lime or orange or a combination!

50g caster sugar
1 lemon
300ml double cream

Zest and juice the lemon and add the sugar. Leave to infuse for 30-60 minutes.
Add the cream and whip until slightly thickened.

Spoon into dishes and present artistically (or not, it’s going to be eaten pretty quick!)
Chill until required but can be eaten immediately.
