Simple celery soup

I’m still in soup mode (did you try my potato and leek one?). Chris and I had both bought some celery which got me thinking of celery soup from a can that I’d enjoyed years ago. Time to get creative…
Serves 2-3 depending on appetite!
500g celery
1 onion
1 large potato
1 stock cube
1 pint boiling water

Instructions
Carefully wash the celery (I had never prepared it before as I don’t eat it raw due to my oral allergy sybdrome and was sooooo surprised at how much mud there was!) then chop/slice.
Peel and chop the onion and potato.
Heat a tablespooon of oil in a pan and fry the veg for 2-3 minutes.
Add the stock cube and boiling water and stir well.

Bring to the boil and simmer for 25-30 minutes until the veg is soft.
Blend together in a food processor or using a stick blender.
Enjoy!
