Vegan chocolate pancakes

With Pancake Day in mind, I fancied trying to make something vegan. I used my basic scotch pancake recipe and adjusted it!

Matthew described these vegan chocolate pancakes as delicious then paused and said ‘delicious is not a strong enough word!’ High praise indeed!
Ingredients
100g plain flour (mine is gluten free)
60g caster sugar
1 tablespoon cocoa
100ml oat milk (other plant based milks should also work in this recipe)
1 flax egg (I tablespoon flaxseed mixed with 3 tablespoons water and left to stand for 5 minutes)
oil for frying

Instructions
Mix together the flax egg and set aside for 5 minutes to thicken. Add the milk.
In a separate bowl, mix the flour, sugar and cocoa.
Add the wet ingredients to the dry and beat together until combined and smooth.

Heat the oil in a small frying pan (or big if you want to do several at once)
Add a tablespoon of batter and cook for a couple of minutes each side.

Serve warm with dairy free spread

Taking a break from the Braden brothers books is this latest Addison Cole book which is a stand alone novel but has the potential to expand!
So many new characters but it feels as familiar as the other series from Addison.

Family is a central theme to the book as it it with her other series. Unrequited or unfulfilled love, strong lead characters, learning from past mistakes. This book is heartwarming as well as passionate, uplifting despite the problems the characters encounter. I’m hoping for a series…!

#Project365 week 7

Day 41: Chris and I went out to lunch for our 6 month wedding anniversary (that long already!) but I was disappointed that Harvester refused to swap my peas for chips so I had to pay extra. This cost £12.98.
The salad bar wasn’t labelled, they had no wheat free bread and no pudding. It tasted good but the portion was stingy (especially considering the extra charge!) and I left still a bit hungry 🙁

 

Day 42: I am not a fan of the colour yellow but there is something special about daffodils!

 

Day 43: this boy has been sooooo clingy this week, he just won’t leave me alone for a second!

 

Day 44: quick shopping trip to Camberley with my mum and Zach

Day 45: Anya dressed as a queen for a banquet at school and then I went in to join her for a castle making workshop in the afternoon.

 

Day 46: blogging event at The Body Shop in Basingstoke. Lovely to meet up with Dawn from Dear Mummy Blog and Jenny from Ramblings of a Jaffa Cat again plus we learned so much!

Super easy vegan dessert

Although not a fan of Valentine’s Day, I couldn’t ignore the day completely so got experimental in the kitchen looking at making a sweet treat.
This super easy dessert only has 3 ingredients but can be used in two ways: as a mousse or as an ice cream!

 

Ingredients
5 tablespoons strawberry jam
1 can cocount milk
Love Hearts to serve.

Instructions
To make a mousse: place the can of coconut milk in the fridge for a minimum of 12 hours.
Open the can of cocount milk and scoop out the thickened cream on top.
Whip for 5-7 minutes. Add a little of the remaining liquid milk if required.
Add the jam and whip for another minute to combine.
Pour into dishes and chill until ready to serve.
Top with Love Hearts and enjoy!

 

To make ice cream: whip the coconut milk (no need to chill) for a minute.
Add the jam and whip for a further minute to combine.
Pour into a dish and freeze until solid.
Remove from freezer 15 minutes before serving.
Top with Love Hearts and enjoy!

We all wolfed down this dessert and the kids couldn’t believe it was just a tin of coconut milk and jam!


Finding Grace, by K.L. Slater

OMG what a book!
This book struck a chord with me straight away. My eldest is nearly 9 and desperate for more independence including walking to and from his best friend’s house nearby, and we have also discussed him walking to my parents’ which is 2 roads away. I immediately identified with the main character Lucie whose daughter wants to walk home alone.
In this book, nine year old Grace is allowed to walk home for the first time ever. Her parents have agreed with the best friend’s parents that they will watch secretly to the corner at which point Blake, the dad, will watch her. But Blake gets distracted by his phone then slips over…
In that split second, Grace disappears.
Her mother Lucie is quite obviously frantic and the police are called immediately but their investigation leads to shocking revelations about more than one family member. Can Lucie trust her frinds or even her own husband…?
Events from Lucie’s past are gradually revealed through the book and we discover secrets which she thought had been hidden forever. Again I felt a real connection with Lucie as I recalled my own university days: the worry of meeting new people, homesickness, the self discipline of organising your own studies.
This is a fast paced intriguing read which is well written and emotive. We follow Lucie as she struggles to cope with the disappearance of Grace. We see and feel the pain and worry she suffers in the present day, whilst the events of the past are revealed in flashbacks. There are also other viewpoints shared with the reader and these serve to give a more broad understanding of events and show other secrets.
To be totally honest, I thought the ending was slightly OTT and therefore not very believable. However, this did not spoil my enjoyment of the book at all. The rest of the book was absolutely superb and I would have no hesitation in recommending it!
