Vegan Thai curry with tofu and chickpeas

Thai curries are one of my favourite meals and have been for years! Quick and easy to make but packed full of flavour whilst also being vegan and gluten free. They are usually very liquid to soak into the rice.

Ingredients
1 onion
1 pepper
396g pack tofu, drained
400g can of chickpeas, drained (keep the aquafaba for other vegan recipes! see end of post for suggestions)
400g can coconut milk
Thai curry paste

Instructions
Chop the tofu, onion and pepper into chickpea sized pieces.
Add a tablespoon of oil to a large pan or wok and fry the onion, pepper and tofu for 5 minutes.
Add the thai paste, coconut milk and chickpeas.
Bring to the boil and then cover and simmer for 10 minutes.
Serve with rice and garnish with coriander.
Other vegetables could be included. We like baby sweetcorn and green beans. We enjoy both green and red curries but check the pot or jar is suitable for vegans before use as some brands use fish. As an alternative to tofu, I sometimes use fake chicken (not Quorn as this has egg in. The Vegetarian Butcher or M&S have vegan chicken that is also gluten free).

As I mentioned in the ingredients, use the chickpea water, also called aquafaba, as an egg replacer in other recipes. It works in cakes (I’ve tried mocha, citrus and vanilla), meringues, waffles, and mousses.

But strange things are happening in town and at Gloria’s: the murdered body of a young woman is found and Gloria’s garage apartment is broken into…
The plot is delivered through a dual timeline narrative of Gloria in the present and Elizabeth in the past. Gloria is isolated, rejected by her church for having a homosexual son who in turns feels betrayed and is avoiding her.
Elizabeth in the past is pregnant when she discovers her husband is having an affair. This leaves plenty of opportunity for the reader to make assumptions about the intervening time. In the present day, Beth doesn’t have a baby and has been widowed so it is easy to guess there is heartache ahead 🙁
Two Widows deals with some pretty big themes and topics: infidelity, grief, a parent’s reaction to coming out, drugs, murder. I felt emotionally connected to both timelines and there was enough mystery to move the plot on while developing the characters in a sympathetic way.
There is plenty of anticipation and tension built up over the course of the book as the story unfolds. Both women are brave and vulnerable, and have aspects of their personality that are easy to identify with so we are drawn into the plot. The strands of the women’s lives and the murder plotline are all tied up neatly at the end leaving a satisfying conclusion.
I really enjoyed Two Widows and am impressed at the emotional element of this psychological thriller.

There is something special about a red bus. The history, the sound, the potential for travel wherever.
Sonia Beldom’s new book for children captures the fun and excitement that the sight of a big red bus still inspires in me as an adult!

 

Granny Franny’s Big Red Bus is the story of a grandmother who wants to arrange a special treat for her grandchildren’s birthdays.
Plenty of humour abounds as Granny Franny realises she can’t actually drive a bus and requires the help of Thinkerbell, a talking bus bell.

Then it starts to rain and Granny Franny needs to get the emergency services to help rescue her and the red bus before they can pick up the twins and go on a tour of London.
The gently rhyming dialogue and bright colourful illustrations combine to hold a young reader’s interest as they enjoy the developing plot.

Some of the text is multicoloured to make it stand out and encourage interest in the words. Great for new readers to learn about emphasis!
The story itself uses language that is easy to read for young children developing confidence. Zach is 4 and quite an advanced reader so he rattled through the story quickly.

The thing that I love most about this book is the subtle theme of the specialness of time with grandparents. I think this would be a lovely gift for a young child, especially if sent from a beloved nanny or grandad.

Summer at Hope Haven, by Kristin Harper

Emily is grieving for her family who died in a helicopter crash. Struggling with the overwhelming loss, she pushed away her fiance who then jilted her. She has arrived at Hope Haven to heal her heart and soul at the family summer home. Love isn’t on her mind but she feels an attraction to a doctor at the hospital where she is painting a mural in the children’s ward. Plus her childhood friend Wilson and his wife Collette are expecting their first baby but he is acting strangely…
Summer at Hope Haven is an emotional book about loss and grief but also forgiveness and acceptance. Emily is working through the stages of grief and coming to terms with her new life alone. She also discovers that her family was not quite as perfect as she believed so needs to accept that too.
The writing is easy to read and feels very natural. Emily’s vulnerability is easy to imagine and identify with, even as we despair at her lack of trust and the frequent miscommunication with Lucas.
There are some interesting plot twists which make this more than a simple love story. They may have been easy to anticipate but it was interesting to see how author Kristin Harper handled it in a sensitive way. I really enjoyed the realistic dialogue as Emily negotiates new friendships, becoming especially close to Wilson’s wife.
Summer at Hope Haven would be a fab beach read as it has a mix of warmth and emotion but also has a lighthearted tone to soften the serious themes.

The Wife’s House begins as a psychological thriller. The mysterious messages, gifts and the drone spying on her begins to develop the tension and raise questions about what the widow is hiding and who would want to harm her.
She has intense vulnerability. Never given a name, which is very peculiar, the widow has been bullied and has low self esteem so she earns our sympathy. Childless and lonely, her motivations are easy to understand but her actions stretched credibility in my opinion.
I seriously had to suspend my disbelief at reading this book. The plot developments were so extreme and unlikely that it frustrated me at first but then I focussed on the positives. The writing is very good and the descriptions of the widow’s experience over the course of the book were vivid and easy to imagine.
The suspense and tension builds up well and there are plenty of hints about the various mysteries in the plot. Juan’s death becomes suspicious and we wonder what has been buried behind the house. Perhaps the widow is not quite what she appears…
Plus the full truth of the triplets motives needs to be explored and revealed. The triplets are almost like the baddies from melodrama once they show that they are too good to be true, but they are not quite as united as they seem which gave them a humanity and potential for redemption.
Overall,The Wife’s House was an entertaining read. The ending was brilliant as the strands finally come together. It transformed into more of an action thriller as the widow fights to save herself from people, nature and unknown enemies.
