Spicy tomato and mushroom one pot pasta

One pot rice and pasta dishes are my favourite meals to make, and I eat them about 4 times a week! So quick and easy to throw together.

This spicy tomato and mushrooom pasta is all made in one pan so less washing up. The spiciness is determined by the chilli and can be adapted to suit your own personal taste or substituted for apepper if making for children. This could also be made with rice if preferred, just adjust the cooking time by simmering for a little longer.
Ingredients (serves 3-4, depending on appetite 😀 )
1 onion
1 green chilli
10 mushrooms
400g can of chopped tomatoes
300g pasta

Instructions
Finely chop and then fry the onion, chilli and mushroom for 5 minutes.
Add the chopped tomatoes and pasta. Fill the empty tomatoes can with water and add to the pan (you can use boiling water but be careful as metal conducts heat!)
Bring to the boil. and simmer for 5 minutes.
Turn off the heat but leave on the hob so the sauce can thicken and the pasta finish cooking.

Serve and enjoy. I am obsessed with coriander at the moment so use it to garnish ALL my food 😀

Vegan coffee brownies

I have a confession. I enjoyed coffee flavoured things much more than coffee itself. I have now stopped drinking coffee completely as I prefer the taste of black tea and tea with plant milks.

I have also missed out on baking much recently as I have been working so much. However, with festivities just around the corner, I wanted to experiment with my previous brownie recipe to make it vegan and add the coffee flavour \I have been hankering for. This did NOT disappoint!

This is the first attempt (I am not one of those people that spends ages repeating a recipe and getting nice pic, I go with the flow, throw ingredients together and hope my cooking knowdlege doesn’t let me down!) and it was so tempting to just eat the batter as it was amazing!

Ingredients

5oz plant based margarine

7oz caster sugar

75-100ml aquafaba (I started with 75 then added a little more to slacken the batter, remember that gluten free flours absorbs more liquid so if using normal flour you may not need any extra, you usually get about 150ml from a 400g can of chickpeas)

1oz cocoa,

3 oz flour (I used SR as I had no plain)

1 tablespoon coffee granules dissolved in 1 tablespoon boiling water and allowed to cool

2oz vegan chocolate chips

Instructions

Preheat the overn to GM 5

Whisk together the margarine, sugar and aquafaba for 4-5 minutes until light and fluffy.

Add the flour, cocoa and coffee and whish for 1 minute until combined.

Add a little more aquafaba if you feel the batter needs to be wetter

Stir in the chocolate chips then pour the batter into a greased an lined tin.

Bake for 30 minutes then have a little peek. If necessary, cover with foil and return to the oven for another 10 minutes.

Remove from the oven and allow to cook in the tin.

Cut and serve!


The Perfect Sister, by Sheryl Browne

Claire and her husband Luke are struggling with their relationship: their daughter has haemophilia, Claire’s dad Bernard has dementia and they have moved in with him, they have no time together as a couple.

The plot is a little far fetched and the major twist developed as I expected. However, there are twists even up until the very last line of the book (one which I didn’t expect at all!) to hold the reader’s attention.
The narrative is told mainly through the viewpoints of Claire and Luke but we do also get flashes of other perspectives including Sophie and Bernard. This allows us as readers to explore the emotions and motivations of the characters and understand their actions better.
I felt very frustrated by Claire and Luke’s inability to communicate with each other and lack of understanding. Both main characters are being manipulated and are aware of this so seeing them try to manage their conflicting emotions is interesting to read.

The Nowhere Girl, by Nicole Trope

 

TRIGGER WARNING: this book deals with miscarriage, domestic and sexual abuse, and alcoholism
As you can see from the trigger warning, this is a devastating book. It is also a brilliant read, so if you are not sensitive to any of the issues mentioned above, then I wouldn’t hesitate to recommend.
Three women linked by a past too terrible to describe.
Alice was abused by her mum’s lover and cared for her little sister whilst her mother slept in an alcohoic fug. Her mother is now in a nursing home with dementia.
Margaret has lost the love of her life who saved her from her miserable childhood. She finds a new man who keeps her under control with beatings and vodka, leaving her daughters to fend for themselves.
Molly reads a blog post about abusive childhoods and it triggers sad memories that make no sense due to her own loving parents. Meanwhile, her own journey to be a mother has been destroyed by six miscarriages: she is pregnant again but expects tragedy any moment…
The Nowhere Girl is absolutely heartbreaking, I won’t deny it. It is also incredibly compelling and emotional. I fluctuated between anger and sorrow at Margaret’s behaviour and perspective, and hope and horror for Alice and Molly. In fact, I would say it has been a long time since I felt such an emotional grip pulsing from a book.
The characters are all so realistic that it makes their suffering heartbreaking to read. The ending was perhaps a little convoluted but the plot was absolutely gripping from start to finish.
The different viewpoints really make this book superb as we are able to see the emotional impact of events of the main characters. Margaret is the most complex character as we see her journey into despair that leads her to fail to protect her daughters. However, her selfishness and addiction also make her unlikeable despite her own pain. Molly and Alice present a feeling of hope that their pasts can be overcome and they won’t make the same mistakes with their own children.

Nicole Trope went to university to study Law but realised the error of her ways when she did very badly on her first law essay because-as her professor pointed out- ‘It’s not meant to be a story.’ She studied teaching instead and used her holidays to work on her writing career and complete a Masters’ degree in Children’s Literature. After the birth of her first child she stayed home full time to write and raise children, renovate houses and build a business with her husband.
The idea for her first published novel, The Boy under the Table, was so scary that it took a year for her to find the courage to write the emotional story. Her Daughter’s Cry, by M.M. Chouinard

A woman with no memory stumbles into a shop begging for help. Her clothes are soaked in blood but it isn’t hers. Test results show it belongs to her daughter but the police and the woman have no idea how old the girl or woman is. A search of the area where they think the woman got lost reveals the body of a man, not a female as expected…
The first part of the book shows the perspective of Detective Jo Fournier and her team. In the second part of the book, amnesiac Zoe has gone on the run, not trusting the police to find her the answers she is desperate for or in their ability to keep her safe. We also see the viewpoint of the man hunting Zoe down and this ramps up the tension.
I felt frustrated with Zoe for not trusting Jo and her team as I had confidence in their abilities based on the previous books! Take a look at my reviews of The Dancing Girls and Taken to the Grave) I always think it is a good thing when a book makes you have a positive or negative reaction to a character 😀
Jo is facing her own emotional and physical battle (which I won’t spoil but did guess) plus we get to see more of her family dynamic which follows on from previous subplots in M.M. Chouinard’s other books. The amnesiac element added an extra dimension to the plot and I liked Zoe’s resourcefulness in trying to uncover her own identity and stay safe.
Although the third in the series, I think this would work perfectly well as a stand alone novel. Overall, a very enjoyable crime thiller.
